Cooking at Librije’s atelier

Este fin de semana lo hemos pasado en Zwolle, tuvimos curso de cocina en un restaurante super famoso: De Librije, que es famoso porque tiene tres estrellas michelin y el Librije’s Zusje (la hermana del Librije) tiene ya dos. Las clases de cocina las dan en Librije’s atelier (el taller del Librije) y te enseñan los platos que sirven tanto en uno cómo en otro restaurante. Nosotros elegimos el curso “mondvermaakjes” que traducido sería “pequeños entretenimientos para el paladar”, aunque mi traducción libre sería tapas sofisticadas por las que pagas un riñón, ja,ja,ja. Es uno de lo cursos más económicos y de los más sencillos pero en el que haces cosas muy vistosas.

We spent last weekend in Zwolle, we had a cooking workshop at a very famous restaurant: De Librije, it’s famous because it has three Michelin stars and the Librije’s Zusje (Librije’s sister) has now two. The cooking classes are at the Librije’s atelier and they teach you the dishes served in both restaurants. We chose the course “mondvermaakjes” which translated would be “little entertainments for the mounth”, although my free translation would be sophisticated tapas for which you pay a kidney, ha, ha, ha. It is one of the less expensive and simple workshop but you do very showy  things.

En cuanto entras te sientes como un rey, rápidamente viene un camarero a enseñarte dónde está tu sitio y a cogerte el abrigo y nada más te sientas aparece la sommelier con tus copas y el vino. Una vez la copa se llena, ya no se vuelve a vaciar. No porque no bebas sino porque la sommelier no para de rellenar. Por cierto que tiene que ser un duro trabajo dedicarte a abrir y probar botellas de vino, supongo que ella habría cenado antes porque nosotros con cena y todo salimos bien contentos 😉

As you walk in you feel like a king already, a waiter comes quickly to show you your site and take your coat, as soon as you sit down the sommelier with your wine glasses and wine. Once the glasses are filled, don’t get empty again. Not because you don’tt drink but because the sommelier refills it all the time. She certainly has a “hard” job, opening and tasting bottles and bottles of wine. I guess she would have eaten before, because we with dinner and so ended up being very happy 😉

Pero vamos con lo importante, lo que cocinamos:

  1. chupachups de paté de pato y remolacha
  2. ostras
  3. crackers con aceitunas negras, pimiento y anchoas
  4. navajas con apio y chorizo
  5. Pepino con queso de cabra y calabaza
  6. risoto de tomate crujiente
  7. Crème brûlée de epoisse
  8. Shake de suero de leche, fresas y geranio de limón

 Empezamos con el chupachups de paté. Si habéis hecho cakepops os resultará muy parecido: se hacen bolitas con el paté, se pinchan en palitos y se meten al congelador media hora. Mientras tanto se cuece el zumo de remolacha con chalotes, laurel y pimienta en grano hasta que reduzca de 1 litro a medio. A lo que se le añada el agar y listo! Ya sólo queda sumergir los chupachups y dejarlos enfriar de nuevo en la nevera.

Y aquí podéis ver el resultado, a la izquierda los originales de Librije y a la derecha los que hicimos nosotros (tengo que decir que los nuestros no son redondos porque me dijeron que no los aplastase un poco). Os dan ganas de probarlos?

Now the most important part, what we cooked:

  1. Lollipop of duck pate and beet
  2. Oysters
  3. crackers with black olives, peppers and anchovies
  4. knives with celery and chorizo
  5. Cucumber with goat cheese and pumpkin
  6. Crunchy tomato risotto
  7. Crème brûlée Epoisse
  8. Shake whey, strawberries and lemon geranium

 We started with the foie gras lollipops. If you have made cakepops, this will be very similar: prepare some balls with pate, put a stick on each and let it cooling in the freezer for half an hour. Meanwhile cook the beet juice with shallots, bay leaf and peppercorns until you reduce 1 liter to half. Then add the agar and ready! You just need to dip the lollipops and let them cool in the fridge again.

And here you can see the result, on the left the original and on the right ours (I have to say that ours are not round because they told me to crush them a little). Don’t you feel like trying them?
